This soup is safe for a gluten free diet, a yeast free diet, vegans and is low-fat. In fact it is free of the 8 most common allergens. I love this soup, it has a nice mild flavor. Your kitchen will smell wonderful!
4 celery stalks, chopped finely
4 lg carrots, chopped finely
1 lg onion, chopped finely
1 Tbsp. olive oil
1 pkg. (16oz) lentils
1 lg (28oz) can tomatoes, pureed
1 tsp. marjoram
1 tsp. salt
few grinds of black pepper
1 Tbsp. dried parsley
6 cups water
1 -32oz vegetable broth (read labels for allergens) I use Pacific brand.
Rinse lentils, set aside.
Chop celery, carrots and onion finely. In a kettle, saute in olive oil.
Add seasonings, saute 1-2 minutes.
Add pureed tomatoes, lentils, water and vegetable broth.
Simmer for 1 1/2 hours.
Serve with some cheddar or mozzarella flavored Daiya. I hope you enjoy this soup. Eat a bowl for me!
