German Chocolate Cupcakes- Simple Things Can Be Wonderful!

My father and husband are huge fans of German Chocolate Cake. For us a whole cake doesn't always get eaten, especially since several of us can't help eat it due to food allergies. So I solved this problem for my husband by making a batch of  cupcakes (of course from a box, we are talking about a time issue here too) and freezing them unfrosted.  The frosting can be stored in the refrigerator for weeks, so when he gets a craving he can take a couple cupcakes out of the freezer, give it a few minutes to defrost, top it with some coconut pecan and chocolate frosting and he is as happy as can be.

This is also an easy way to make a dessert ahead when you have a time consuming dinner or schedule. Make the cupcakes weeks ahead and store in a freezer safe container. Take them out the day you plan on serving them, and frost. Your family or guests will think you spent hours on these delicious cupcakes. Besides...doesn't everybody love cupcakes?

 You can easily make gluten free cupcakes too, there are many box mixes available at local grocery stores, or try one of my gluten free recipes:
If you are dairy sensitive use the Betty Crocker Chocolate Fudge Frosting instead of Milk Chocolate.  And as far as the coconut pecan topping, you may have to make that because the purchased products I found all have dairy. Note: The purchased Betty Crocker frostings shown below are gluten free, but not dairy free.

Weight watchers count each cupcake as shown below:
-plain unfrosted cupcake has 4 points each.
-each cupcake with 1 Tbsp. of each frosting has 6 points.
-each cupcake with 2 Tbsp. of each frosting has 8 points.

Here we go......
Make a batch of your favorite chocolate cupcakes. Let cool completely and freeze for later.

Or decorate now…

I like to use a pastry bag, it's quick and easy that way.
Top with some coconut pecan frosting in the center of the cupcake. 
Add some of your favorite chocolate frosting around the edges. 

Wow...simple and attractive and really yummy!  I bet these will be a big hit at your house too!!
