Light & Crispy Parmesan Crusted Chicken Breasts

Light and crispy on the outside and moist and juicy on the inside.  The leftovers are delicious in Chicken Alfredo, soups, salads and sandwiches.

4 boneless and skinless chicken breasts. (thighs are optional)
Light Miracle Whip or Mayonnaise.
Seasoned Bread Crumbs, like Progresso Italian bread crumbs. (Gluten free if necessary, could even be your favorite crushed crackers)
Grated Parmesan cheese.

Preheat oven to 425.

Rinse Chicken with cold water and pat dry with paper towels.
Spray cookie sheet with no-stick cooking spray.

In a small bowl combine 1/4 cup Light Miracle Whip or Mayonnaise with 2 Tbsp. parmesan cheese.
Spread over one or both sides of chicken breast. I like to do both sides for a super moist chicken breast.
Sprinkle or coat with bread crumbs.

Bake uncovered for 25 minutes. Do not turn over during baking, this will cause the coating to come off.

Weight watchers will need to add 2-3 additional points to their serving of chicken. So if you have 4 ounces at 4 points, you will add 2-3 points to account for the coating.
