Guacamole, Bacon Burgers with Grilled Pineapple

My daughter suggested this burger one night, she had eaten something similar in a restaurant. We have been eating our burgers this way ever since.  Don't forget your gluten free buns if needed. I use this recipe for my gluten free buns,  Best Gluten Free Sandwich Rolls.  Just slice and toast before adding burger and toppings. Gluten free hamburger buns can also be purchased, Enger G makes a tapioca hamburger bun. Just toast before adding burger and toppings or bun will fall apart.

You will need a fresh pineapple sliced.
Cooked crisp bacon or turkey bacon. We've used turkey bacon here.
Your favorite recipe for guacamole, (or try mine) or fresh sliced avocado.

BBQ hamburger patties. During the last 5 minutes grill pineapple slices. Be sure to flip the pineapple slices at least once.

When burgers and pineapple are finished grilling top each patty with a piece of bacon.

Add a slice of cheese. Any variety you like, swiss, american, or my favorite  pepper jack.

Place grilled pineapple slice on top of cheese. Close BBQ lid for about 1 minute to let cheese melt slightly.   Grill buns if preferred.

And for the final touch....on top of pineapple add a healthy portion of guacamole. My recipe is used here.

Complete with onions, tomatoes, and lettuce. Bite into one of the best burgers EVER!!
