Gluten and Dairy Free Dough Balls (Energy Bites)

These little guys are loaded with natural ingredients and there is no need to turn on your oven. The perfect little treat to make for a hot August afternoon!

Weight watchers can count each energy bite at only 2.3 points each.
Calculations here are using Better n' Peanut Butter.

Gluten and Dairy Free Dough Balls
(inspired by Gimme Some Oven)

1 c. Old Fashioned Oats (gluten free if needed)
2/3 c. Coconut Flakes
1/2 c. Ground Flax Seed
1/2 c. Nut Butter. I used natural peanut butter...or try Better n' Peanut Butter (a low fat gluten free product)
1/3 c. Honey,  for Vegans... Agave or Pure Maple Syrup.
1/4 c. Mini Chocolate Chips (Enjoy life dairy, nut and soy free)
1 tsp Vanilla

Combine and mix all dry ingredients in a mixing bowl. In the center of the dry ingredients make a little well. Add honey, vanilla and peanut butter in this little "well" and mix together before incorporating with the other ingredients.  You can also mix the honey, vanilla, and peanut butter in a separate small bowl, then add them to the dry ingredients. Mix everything well. Refrigerate for approximately 30 minutes. Roll into 24 balls. Keep refrigerated and enjoy!

Simply mix dry ingredients together, then add liquid ingredients and mix well.

Form mixture into approximately 2" balls.

Enjoy your dough balls….or energy bites as I call them.  Freeze for longer storage, or store in the refrigerator for many weeks.
