Gluten Free Chocolate Applesauce Muffins

If you like to start your day with a little something sweet or chocolatey here is a muffin that is just that and still on the healthy side.

We made our muffins gluten free but they can be made with all-purpose flour as well, just leave out the xanthan gum.
Weight watcher points plus should count 4 points plus for each muffin.

Gluten Free Chocolate Applesauce Muffins              Makes 18
Prepare muffin tins with non-stick cooking spray.  Preheat oven to 350.

1/4 cup coconut oil
1/4 cup plain yogurt (soy, greek, coconut etc..)
2/3 cup sugar
2 eggs (or egg substitute)
1 1/2 cups unsweetened applesauce
1/2 cup cocoa powder
1 3/4 cups gluten free flour  - Bob's Red Mill Gluten Free Baking Flour                                                                       (or all-purpose flour for non-gluten free)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/4 tsp xanthan gum if using gluten free flour
2/3 cup chocolate chips, or replace half with peanut butter flavored chips (used here)

In a large mixing bowl cream coconut oil, yogurt, and sugar. Add in eggs or egg substitute and applesauce, mix well.

In a small bowl combine everything else except the chips. Mix well and add to creamed mixture.
Stir in flavored chips.

Fill muffins about 2/3rd full. Bake for 18 minutes or until done. Remove from tins and cool on wire racks.

Enjoy.... the chocolate and peanut butter chips melt in your mouth!
