Quinoa & Black Bean Pilaf



Here is a great side dish I am exited to share with you from my daughter's recipe file. It's healthy and satisfying and really quick to put together.

People counting weight watcher points should know the entire recipe adds up to 32 points, so depending on how you divide it the points will vary.  If you divide this recipe into 6 servings, count 5 points per serving. If you divide this recipe into 8 servings, count 4 points per serving.

Quinoa & Black Bean Pilaf                 Serves 6-8
3/4 cup quinoa
1 Tbsp olive oil
2 cans black beans, drained
1 1/2 -2 cups vegetable or chicken broth (start with 1 1/2 cups)
1 chopped onion
1/2 -1 tsp cayenne pepper (1 tsp if you like it hot)
1 tsp garlic
1/2 - 1 tsp coriander leaf (try 1/2 first) or 2-3 Tbsp fresh cilantro
salt and pepper to taste 

In a large skillet saute onions in oil for about 3 minutes. Add quinoa, spices, and broth, bring to a boil then reduce heat to simmer.
Let simmer for 25-30 minutes. Stir in beans and add extra broth if desired. And it's ready to serve! As it sits more of the liquid will absorb.
