Quick & Hearty Vegetable Soup

I needed something fast for dinner that was gluten free and easy on the tummy, but filling too.  In a matter of minutes this soup was cooking.  I ended up with a satisfying, almost homemade bowl of soup that was healthy too.

This is also easy on the tummy if you have IBS, corn could be omitted if needed.  Also a wonderful soup for Yeast Diets.

Vegans and Vegetarians can use a vegetable broth and enjoy this quick vegetable soup as well.

Looking closely you can see I added long grain white rice (pre-cooked) and several handfuls of noodles, gluten free for us.  You could also add left-over chicken or turkey for your meat eaters.

Quick & Hearty Vegetable Soup
In a large kettle
8 cups water
8 chicken bouillon cubes ( 8 cups of any broth, vegetable for vegans)
1 large package of mixed frozen vegetables.
1 large potato, peeled and cubed.
1-2 cups of cooked rice (any type) amount is a personal preference.
1 1/2 - 2 cups noodles, any shape or style. Gluten free if needed.
Couple shakes of celery salt, adjust to taste.
Salt and pepper to preference.
Left-over chicken or turkey cut in cubes, optional.

Dissolve bouillon cubes in water, add all ingredients except rice and noodles.
Simmer until potatoes are tender. Add rice, noodles, and chicken as desired. Let simmer until noodles are ready, 7-10 minutes.

More broth can be added if too much is absorbed by the rice and noodles. It will depend on the amount you choose to add.

Serve up with some rolls or muffins. We had Applesauce Muffins with ours. Delicious.
