Here is a muffin that has no added fat and still tastes great. I like to add Craisins to my salads, but haven't tried them in baked foods very much. I thought the tartness would be perfect with the banana flavor. I really liked the result.
The recipe can be made with regular flour or whole-wheat pastry flour if gluten free isn't necessary, if using regular flour omit the xanthan gum.
The Weight Watcher points will be the same with all flours. For those on Weight Watcher Points Plus, each muffin has 3.5 points.
GF Craisin-Banana Muffins Makes 14 muffins
2 cups gluten free flour or baking mix (regular is fine if tolerated)
3/4 tsp baking soda
3/4 tsp salt
1 1/2 tsp xanthan gum (omit with regular flour)
1 cup mashed banana
1/2 cup 100% pure maple syrup
1/3 cup unsweetened applesauce
1/4 cup unsweetened non-dairy milk (regular is fine if tolerated)
1 1/2 tsp vanilla extract
1/2 cup Craisins
Preheat oven to 350. Spray muffin tin with non-stick cooking spray.
In a large mixing bowl mix together flour, baking soda, and salt.
In a smaller bowl mix banana, maple syrup, applesauce, milk(non-dairy) and vanilla.
Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix until everything is evenly moistened.
Spoon batter into muffin tins. Bake for about 25 minutes. Cool on wire racks.
