Easy Beefy Bake Casserole - GF Option

I'm not one to use the phrase "comfort food"- I'm more inclined so say, "I'm in the mood for...." but this might be an example of comfort food.

 If you were to ask my dad or husband, they would say it is one of their favorite casseroles for sure.

There is no added fat and it can be made gluten free simply by switching out the noodles to a gluten free variety. If you are following a yeast friendly diet, simply leave off the cheese. 

If you count weight watcher points you will need to add 8 points per serving without cheese and 10 points with cheese.

Easy Beefy Bake Casserole                                 Serves 5
1 1/2 cups elbow macaroni, gluten free if needed.
1 lb lean ground beef, ground turkey or chicken would be great options as well.
1/2-3/4 cup finely chopped celery
1/2 cup finely chopped onion
1  8 oz can tomato sauce
1  6 oz can tomato paste
1 cup water
1/2 tsp salt
1/8 tsp pepper
1/4 tsp chili powder
1 1/2 cups frozen corn
1 cup grated cheddar cheese- or more if desired.  (none for yeast free diets)

Cook macaroni according to directions, drain. Set aside.
Brown hamburger, drain/rinse if necessary (to remove any fat) return to pan and add onions and celery. Cook together about 5 minutes. Add all ingredients except noodles. Mix well. 
Add noodles and carefully mix together.  
Pour into a 2 1/2 qt casserole and top with 1 cup grated cheddar cheese.
Bake for 30 minutes at 350.

After baking and ready to serve.

I like to serve this dish with corn bread.  Leftovers are great too!
