Grandma's Cheesy Potato Casserole

Here is another family favorite you would see at most of our holiday gatherings.  Mom often served it at brunches with her quilting friends as well. In fact....this is another recipe from my mom, the famous "Mrs. Rogers!"  

This is a dish to fully enjoy and savor the perfect blend of flavors.

Grandma's Cheesy Potato Casserole                Serves 10-12
1 can cream of chicken soup
2 cups sour cream
1 1/2 tsp salt
1/4 tsp pepper
1/3 - 1/2 cup green onions, chopped
2 cups grated cheddar cheese
extra grated cheese for the top

Mix soup, sour cream, salt, pepper, green onions and cheese in a large mixing bowl.
Add potatoes and stir to combine. Place in a greased 13"x9" pan. Bake for 30 minutes at 350. Remove from oven and top with extra cheese, return to oven for 15 more minutes. Mixture should be bubbly around the edges. 

Optional topping: 1/4 cup butter melted, mixed with 2 cups crushed cornflakes. Add on top before baking instead of extra grated cheese. Bake 45 minutes. Mixture should be bubbly around the edges.

Shown here is the potato dish at the point where grated cheese is added on top and returned to oven for 15 more minutes.
