GF Quinoa Chip & Raisin Cookies

I'm really excited about this new recipe.  There is no strong taste of quinoa and the cookie is really nice and chewy. What a treat! I decided to make these with chocolate chips and raisins, but of course they could be made with just one or the other. Maybe you would like to add nuts as well.  Experiment...that's the fun in cooking.

This recipe could also be made with an all purpose flour, just leave out the xanthan gum if you do. This ingredient is only needed with gluten free flours.

Weight watcher points, 3 for each cookie.

GF Quinoa Chip & Raisin Cookies                Makes about 25 cookies
1/2 cup butter or dairy substitute, softened
3/4 cup sugar
1 large egg (or egg replacer, I use Enger-G)
1 1/2 tsp vanilla extract
2 Tbsp water
1 cup gluten free flour blend such as Bob's Red Mill GF All Purpose Flour
1 cup quinoa flakes
1 tsp baking powder
1 tsp cinnamon
1/2 tsp xanthan gum
1/4 tsp salt
1/2 cup raisins
1/2 cup semisweet chocolate chips

Preheat oven to 325. Line baking sheets with parchment paper or silicone liners.
In a large mixing bowl cream butter and sugar. Add egg, vanilla, and water. Mix well.
Add all other ingredients except raisins and chocolate chips. Mix until blended. Stir in raisins and chocolate chips. Drop by tablespoons onto baking sheets. Bake for 12-14 minutes. They will just lightly show a golden brown around the edges. Remove from oven and let sit on pan for a couple minutes.
Remove and let cool completely on wire racks. Store in an airtight container or freeze.

The dough ready to make cookies. This is a vegan version of the recipe.

I like to use silicone baking liners for my cookies.
