Favorite GF Sweet & Sour Chicken and Almost Fried Rice

Do you love Sweet and Sour Chicken? Then take a minute and check out this version that is baked in the oven.  Honestly - this is amazing!  Thank you, for the recipe, my family loved this dish. 
I made a couple personal changes, but check out her wonderful blog for this and other recipes you will want to try.

*You will need to have cooked white rice, (or brown) ahead so that it is cold when used for recipe.

Favorite GF Sweet & Sour Chicken and Almost Fried Rice
3-4 skinless, boneless chicken breasts, cubed
salt and pepper
1 cup cornstarch
3 eggs, beaten
1/4 cup canola oil
3/4 cup sugar
4 Tbsp ketchup
1/2 cup distilled white vinegar (Heinz is gluten free)
1 Tbsp soy sauce, San-J Gluten Free, or Bragg's Aminos or regular soy sauce if not gluten free
1 tsp garlic salt

Preheat oven to  325. Spread out chicken cubes and lightly sprinkle with salt and pepper.
Roll chicken cubes in cornstarch then dip into the eggs. Heat oil in large skillet and cook chicken until lightly browned. Place chicken in a 9 x 13 pan sprayed with a non-stick cooking spray.
In a small bowl mix sugar, ketchup, white vinegar, soy sauce and garlic salt. Pour over chicken. This is very watery to start, but will thicken as it cooks. Bake chicken for 1 hour turning chicken every 15 minutes.

Almost Fried Rice (oil free)
1/4 cup vegetable broth
1 cup finely diced broccoli
1 cup finely diced carrots
1 cup finely diced red, yellow, or orange bell pepper
1 cup peas, frozen
1 cup finely diced onion, or green onions thinly sliced
2 cups fresh mushrooms, sliced
1 1/2 tsp ground ginger
2 tsp minced garlic
4 cups cooked  white or brown rice, cold.
1/4 cup soy sauce, San-J Gluten Free, or Bragg's Aminos or regular soy sauce if not gluten free

Heat broth in a large skillet over medium-high heat. Add all vegetables except peas. Saute 3-5 minutes. Add peas, ginger, and garlic. Cook another minute or so. Stir in rice to heat. Add more broth as needed and soy sauce. 
Serve chicken on the side of the rice or on top. It's really wonderful on top.
If you prefer a more original fried rice here is a great recipe to use.

Easy Fried Rice
3-4 cups cooked cold rice
3 Tbsp oil, sesame is a nice option
1 cup frozen peas and carrots, thawed
1 small onion, chopped finely
2 tsp minced garlic
2 eggs, beaten
1/4 cup soy sauce (gluten free see above recipe)

Heat oil in a large skillet. Sauté peas and carrots, onion and garlic. Push cooked vegetable mixture to one side of the skillet. Scramble eggs on other side of skillet, not much space is really needed. Add rice and soy sauce and blend entire contents in skillet gently together. Cook through. Delicious!
Other options are adding diced pork or ham.

Cornstarch and egg for dipping chicken cubes.

Brown chicken pieces.

Pour sauce over browned chicken in a 9 x 13 pan.

 Turn every 15 minutes for 1 hour.

It magically becomes this!

Saute chopped vegetables in broth.

Add rice and heat through.

Plate it up!
