Banana Cookies w/Cacao Nibs & Chips

Here is a sweet new cookie with no added sugar and the only fat coming from your choice of nut butter. The recipe idea is from the blog, The Skinny Fork, I just made a few changes to fit my taste and you can too.

Again I've added cacao nibs to this recipe, but they are optional. Cacao nibs are extremely healthy, my mom said she had heard they help keep arteries healthy just the other day. 

If you count weight watcher points, each cookie has 2.5 points. Too further reduce fat in cookies omit nuts and use a reduced fat peanut butter.

Banana Cookies with Cacao Nibs & Chips          Makes about 20 cookies
1/3 cup peanut butter or any nut butter of your choice.
2 ripe bananas, mashed
2/3 cup unsweetened applesauce
1 tsp vanilla 
1/2 tsp salt
1/2 tsp cinnamon
dash of ground cloves
dash of ground nutmeg
1 1/2 cup old fashioned oats (gluten free if needed)
1/4 cup nuts, I used cashews
1/4 cup unsweetened shredded coconut
1/4 cup semi sweet chocolate chips  (I used Enjoy Life brand)
2-4 Tbsp cacao nibs (I used 2 Tbsp for WW points)

Preheat oven to 350.  Prepare baking sheets with parchment paper or silicone mats.
In a large mixing bowl mix first 4 ingredients. Add all other ingredients and mix well.
Spoon 2 Tbsp of dough on prepared baking sheets and slightly flatten. 
Bake for 20-25 minutes. Let cool slightly before transferring to wire racks.

If you don't eat them all at once...remember moist cookies like these store longer in the refrigerator. 

Here are the steps:

Mix first 4 ingredients in a large bowl.

Mix dry ingredients and add to banana mixture.

Spoon onto prepared baking sheets. Bake 20-25 min. at 350

  Let cool on wire racks before storing.
