GF Light Berry & Peach Crisp




I love just about any fruit in a crisp. It's an easy way to get the taste of pie in a healthier way. Not to mention they are a cinch to make and usually gluten free.  We've been picking our own berries, a combination of marian berries, boysenberries, and blueberries. And we've been picking them a lot, in fact there weren't many left.   I mentioned to my husband that we should add a couple peaches to the berries and make a crisp. Of course he loved that idea! 

I made my crisp with a lighter butter, Smart Balance. Feel free to use regular butter or a dairy free like, Earth Balance.

If you count weight watcher points, each serving is 3.5 points -if using regular sugar. If using Splenda or another sugar free type sweetener then count 3 points per serving.

GF Light Berry & Peach Crisp                        Makes 9  servings
4 cups of any mix of berries, I used marian berries , blueberries, and boysenberries.
2 large peaches or 3 small - peeled and sliced
1/4 cup sugar,  Splenda for sugar free
3 Tbsp corn starch
1 cup old fashioned oats
2 Tbsp brown sugar
2 Tbsp Smart Balance, Earth Balance for vegan or dairy free

Preheat oven to 375
In a large mixing bowl add berries and sliced peaches. In a small dish mix sugar and corn starch. Mix sugar mixture in with berries and peaches. Pour into an ungreased 8" or 9" square or round baking dish.
In a small mixing bowl add oats and brown sugar, mix well.  Blend in Smart Balance. (I use my hands)      
Cover fruit mixture with oat mixture.  Bake about 45 minutes or until fruit mixture is bubbling and oat mixture is a nice golden brown.
Remove from oven and let sit until ready to serve.  








Dish up and enjoy!


We decided to have some Allergy Friendly Vanilla Soft Serve with ours. This ended up being a very healthy and delicious dessert.



We loved this recipe so much we made it twice in one week! I hope you enjoy it too!!
