Gluten Free Nutella Freezer Fudge




The last place I needed to be this morning was in the freezer after these little gems - and no, I don't mean blueberries!




 Here's my latest...Gluten Free Nutella Freezer Fudge! Store this treat in the refrigerator or freezer...this is a chilled treat. This fudge can be eaten at room temperature, but I think it is best chilled. Also these are soft and won't hold their shape as well at room temperature.


If you count weight watcher points, these treats are 5.5 points each without peanut butter.

Gluten Free Nutella Freezer Fudge         Makes 18 pieces
1/2 cup butter, or dairy free type replacement like Earth Balance.
1 cup granulated sugar
1/2 milk, or non dairy type (I used soy milk)
4 Tbsp cocoa
1/2  cup plus 2 Tbsp Nutella, or any chocolate peanut butter substitute.
3 cups quick cooking gluten free oats, like Bob's Red Mill Brand. Regular quick oats if not sensitive to gluten.
2 tsp vanilla extract
1/4 cup peanut butter, any type (optional)

Lay out a sheet of wax paper on a smooth surface.
In a medium size saucepan combine butter (or non dairy), sugar, milk(or non dairy), and cocoa.
Stir while ingredients melt and bring to a rolling boil. Boil for one full minute, stirring the whole time.
Turn off heat and add Nutella and vanilla. Stir well until smooth.
Mix in oats.

Scoop out onto wax paper and slightly flatten. Let sit to cool.
Melt peanut butter in microwave for 20 seconds, stir and drizzle over fudge rounds or spread over tops. Let peanut butter cool, it will become like a magic shell texture.  I like to add peanut butter to half of my  Nutella fudge so people have a choice. Separate with pieces of wax paper to freeze.

Chill and enjoy!




 Steps:
 Combine first 4 ingredients in a saucepan.




 Stir ingredients while melting.




 Boil for one full minute, stirring constantly.



Add Nutella and vanilla. Stir well. Add in oats.





Scoop out onto wax paper and flatten slightly.






Let sit to cool.




Melt peanut butter in microwave for 20 seconds.



Drizzle melted peanut butter over fudge pieces, this is optional.  Let cool. Refrigerate or freeze.
