You can purchase these colorful small potatoes in a bag, or just use any you have in your kitchen. I like the variety, so I usually go for the colors. This recipe is already gluten free, so no changes need to be made and everybody can enjoy them.
Weight watcher points should be counted according to size of potatoes. Servings equal to 1 small potato is 2 points. Servings equal to a medium size potato 4 points. Use 1/2 Tbsp oil in recipe.
Cajun Potato Medley
As many potatoes as you like. I filled a large mixing bowl about 3/4 full of washed, dried, and cut up potatoes.
1/4 tsp oregano
1/4 tsp thyme
1 tsp paprika
1/8 tsp cayenne pepper
1/8 tsp black pepper
1/4 tsp sugar
1/4 tsp cumin
1/2 tsp salt
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp Tabasco sauce
1/2 Tbsp to 1 Tbsp vegetable oil, I used olive oil.
Preheat oven to 400. Prepare a large baking sheet with a non stick cooking spray.
In a gallon size zip lock bag add all seasonings. Except Tabasco sauce and oil.
Shake and mix seasonings in bag.
Place cut potatoes in a large mixing bowl and toss with Tabasco sauce and oil. Toss a lot to coat potatoes well.
I use gloves after potatoes have been seasoned, because the seasoning tends to stick to my fingers. Place potatoes in freezer bag with seasonings, shake like crazy and coat all potatoes well.
Pour potatoes out onto prepared baking sheet and arrange in a single layer.
Place in oven and bake 30-40 minutes turning half way through.
Remove from oven and serve up as a side.
We like to have ours with these spicy Mexican Bean Burgers.
Here are some simple steps.
Rinse and dry off small round colorful potatoes, any variety is fine too.
Cut potatoes in fourths. And toss with Tabasco sauce and olive oil.
Shake and roll bag to coat all potatoes. Make sure it's sealed well!
Turn potatoes half way through the baking time.
Serve up and enjoy your meal!
