GF Easy Fried Rice

Easy Fried Rice
3-4 cups cooked cold rice
3 Tbsp oil, sesame is a nice option
1 cup frozen peas and carrots, thawed
1 small onion, chopped finely
2 tsp minced garlic
2 eggs, beaten
1/4 cup soy sauce, San-J Gluten Free, or Bragg's Aminos for gluten free.  Regular soy sauce if not gluten free.
Heat oil in a large skillet. Sauté peas and carrots, onion and garlic. Push cooked vegetable mixture to one side of the skillet. Scramble eggs on other side of skillet, not much space is really needed. Add rice and soy sauce and blend entire contents in skillet gently together. Cook through. Delicious!
Other options are adding diced pork or ham. And other vegetables (I always add more vegetables as shown)
