S'more Cookies with Gluten Free Option



Even if you don't like S'mores…you are going to love these!! How do I know? Because I am not a huge S'more fan. I will maybe have one just because it's a fun activity while camping, but they are definitely not my favorite treat.  These cookies however…are just amazing. I found them on this fantastic blog, The Girl Who Ate Everything. I highly suggest visiting her blog!!  I altered the original recipe for gluten free and vegan diets.

I took these cookies to a couple Christmas parties this year and they were a huge hit. I am also going to stick some in the freezer for later : )


S'more Cookies with Gluten Free Option        Makes about 3 dozen
11 Tbl. butter, softened or Earth Balance Buttery Cubes for dairy free, or coconut oil.
1 cup brown sugar
1/2 cup granulated sugar
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon, optional (I liked this)
2 1/2 cups flour, gluten free if needed, Bob's Red Mill Gluten Free All Purpose Baking Flour is a favorite of mine.
1/2 tsp xanthan gum for gluten free only
1/2 cup semi-sweet chocolate chips, Enjoy Life Semi-Sweet Mini Chocolate Chips are allergy friendly.
1 cup mini marshmallows, Kraft Foods Inc. and Doumak Inc. are gluten free. Dandies brand are vegan.
3 regular sized Hershey's bars, broken into pieces. Enjoy Life Mega Chunks are allergy friendly and a good substitute.
1-2 pkgs graham crackers, broken in half. Gluten free if needed. I like Kinnikinnick S'moreables Graham Style Crackers.


Weight Watcher Points Plus followers count each cookie square at 5.6 points.

Preheat oven to 375 degrees. Line baking sheets with parchment paper or silicone liners.
Place half sized graham crackers on the prepared baking sheets, they can be fairly close together. The recipe used 26 squares, but this can vary depending on the amount of cookie dough you use on top.

In a small  bowl add flour, baking soda, salt and cinnamon. Mix together, and set aside.

In a medium mixing bowl cream butter or butter substitute and sugars. Add eggs or egg substitute and vanilla. Mix well.
Add flour mixture, stir in or use low setting on mixer.
Fold in chocolate chips and marshmallows. 
This dough can be chilled for about an hour or used right away. I used it immediately after mixing.

Place about 1 1/2  Tbls of dough on each graham cracker piece and press down gently.
Bake 5 minutes then add candy bar pieces or mega chunks on top. Return to oven and bake another 5-7 minutes. For Christmas we added some red and green plain M&M's, change up colors for different holidays. We also thought mini peanut butter cups would be delicious too.

Let cookies cool on wire racks.
