GF Quinoa Chocolate Chunks & Crispy Cookies



























I have a new quinoa cookie for you to try. It has chunks of chocolate that are going to melt in your mouth.
I decided to chop up a dark chocolate bar that is sweetened with stevia because it's so hard to find a chocolate chip without sugar cane, dairy and gluten.  The results were fantastic, I will no doubt be doing this again!



 GF Quinoa Chocolate Chunks & Crispy Cookies            Makes 20-25 cookies
1/2 cup Butter or non-dairy substitute, like an all vegetable shortening or coconut oil.
3/4 cup sugar,  I used beet sugar
1 large egg, or an egg replacer.
1 1/2 tsp vanilla extract
2 Tbsp water
1 cup gluten free flour blend, a purchased mix or see my post,  Gluten Free Flour Combinations for baking.
1 cup quinoa flakes
1 tsp baking powder
1 tsp cinnamon 
1/2 tsp xanthan gum
1/4 tsp salt
1/2 cup raisins
3/4 cup gluten free crispy  brown rice 
1/2 cup dark chocolate bar cut up in small chunks, semi-sweet mini chocolate chips are ok too.

Preheat oven to 325. Line baking sheets with parchment paper or silicone liners.
In a large mixing bowl cream butter or non-dairy substitute and sugar. 
Add egg, vanilla, and water. Mix well.
Add all other ingredients except raisins, crispy brown rice, and chocolate. Mix until blended. 
Stir in raisins, crispy brown rice, and chocolate. Drop by tablespoons onto baking sheets. Bake for 12-14 minutes. They will just lightly show a golden brown. Remove from oven and let sit on pan for a couple minutes before moving to wire racks to cool completely. Store in an airtight container or freeze.
