Gluten and Dairy Free Dough Balls with Hemp Seed & Quinoa Makes about 46 balls
1 1/4 cup uncooked gluten free old-fashioned oats
3/4 cup quinoa flakes
1 1/3 cup unsweetened coconut (sweetened is fine if you like)
1 cup nut butter, I've used a natural peanut butter here.
1 cup ground flaxseed
2/3 cup honey (agave or pure maple syrup for vegans)
2 tsp vanilla extract
1/4 cup hemp seeds
1/2 cup mini chocolate chips, I use allergy friendly Enjoy Life brand.
Mix all dry ingredients in a large mixing bowl. Combine nut butter, honey or other sweetener, and vanilla in a smaller bowl. Add liquid mixture to dry mixture and combine. Use hands if needed, make sure ingredients are well combined.
Shape into 2 inch balls. Store in refrigerator or freezer for longer storage. These will last for weeks in the refrigerator.
Weight watchers are looking at 3 points per ball and lots of healthy ingredients.
