Gluten Free Super Food Waffles

                                  Mmmm…what is it about a warm, golden brown waffle?

I have a few variations of this waffle recipe on my blog, but this is my favorite combination. They have a delicious wholesome flavor. No fat, eggs, or dairy in this recipe.

Quinoa, hemp seeds, oats, and bananas are all considered superfoods. Quinoa is full of protein, iron, and fiber. Hemp seeds contain a perfect balance of essential amino acids and are considered more allergy-free than many other seeds. The health benefits of oats and bananas are documented in hundreds of studies.

A warm waffle with sunflower seed butter and a berry fruit spread is one of my favorite breakfast foods and afternoon snacks.

If you have a large enough blender I suggest making a double batch. These are going to get eaten up fast!

Gluten Free Super Food Waffles                    3 1/2  Waffles
1 1/2 cups gluten free oats
1/2 cup quinoa flakes
2-3 tablespoons  hemp seeds
1 banana
2 cups water
1 tsp vanilla
1/4 tsp salt

Spray a waffle iron with a non-stick cooking spray.
In a blender add all ingredients. Puree well. Don't worry, you can't over mix these.
Let mixture sit about 10 minutes. Heat waffle iron to medium heat. Pour 1 cup of batter onto hot waffle iron and let cook 10-11 minutes or until golden brown.
Remove waffle from waffle iron with a fork and serve with nut butters, maple and fruit syrups, fruit, or whatever   toppings you like.  You will find these are even delicious plain.

If freezing waffles, let them cool completely and place wax paper between each waffle to prevent them from sticking together.  When you are ready to eat one just pop it into the toaster.

 Weight watchers count each whole waffle at 5 points.
