Oat & Nut Fruit Crisp - Gluten Free Makes 6 Servings
2 large pears, peeled, cored, and sliced
2 large apples, peeled, cored, and sliced
1 cup blueberries, fresh or frozen
1/2 cup pure maple syrup
1 Tbsp lemon juice
1/2 Tbsp ground cinnamon
1/2 cup gluten free flour, I just used a gluten free baking blend I had on hand.
1/2 cup old fashioned gluten free oats
1/2 cup finely chopped walnuts
2/3 cup brown sugar
1/2 cup butter, or dairy free substitute
*optional tip - to ensure apples are fully cooked, I always precook the slices a couple minutes in the microwave before mixing in any crisp or pie.
Preheat oven to 350. Prepare a 9" square or round baking pan with a non-stick cooking spray.
Place sliced apples and pears in the pan, then add the blueberries on top.
Drizzle maple syrup, then lemon juice over all. Lastly sprinkle cinnamon over fruit mixture.
Set aside and prepare topping.
In a medium bowl mix flour, oats, nuts, and brown sugar. Using a pastry blender cut in the butter or butter substitute until the mixture resembles coarse crumbs. Cover fruit with topping and bake about 45 minutes. Fruit mixture should become nice and bubbly and crumb topping nicely browned.
Store leftovers in refrigerator.
Add syrup, lemon juice and cinnamon.
Prepare crumb topping using a pastry blender to cut in the butter or butter substitute.
It's nice to serve warm, but delicious at any temperature.
