Gluten Free Low-Sugar, Low-Fat Chocolate - Banana Pancakes

I love these pancakes for a many reasons…they are low-sugar and low-fat, easy to make, and perfect for freezing.

Gluten Free Chocolate - Banana Pancakes                Makes 10 pancakes
1 1/2  cup pancake mix, I used The Craving Place All Purpose Pancake & Waffle Mix.
3 Tbsp cocoa powder
1 Tbsp dry sweetener, I used beet sugar
1/2 banana, mashed
1 3/4 - 2 cups water
Additional mini chocolate chips are optional.

In a medium size mixing bowl add dry ingredients, mix well. Add water and mashed banana. Mix well.
Amount of water added really depends on the type of pancake you prefer. More water for a thinner pancake like mine, or less for a thicker, hearty pancake.

Lightly grease or use a non-stick spray on a griddle or large skillet. Heat to medium high.
Add 1/4 cup of pancake batter to hot griddle or pan. Sprinkle a few chocolate chips on top if desired.
Bubbles will form over the top of the pancakes when they are ready to flip over.
Continue cooking opposite side after flipping. Cooking times will vary.

Serve up with syrup, nut butters, and/or sliced fruit.

Maybe even eat a few plain. This can be a fun, mess-free finger food for kids.
Use in place of bread for a fun P & J sandwich for a snack. (My favorite way to eat them)

Simple steps to a fun breakfast or snack!

Mix up batter.

A few minutes on a hot griddle…with or without chips.

Stack them up and indulge in a low-fat, low-sugar treat.
